About Indian Iron Farms

Carol Anne and Stephen, San Diego Mushroom Farmers

Hi! We’re the Chans—Nurse Carol Anne and Dr. Stephen Chan, a holistic dentist—passionate about health, healing, and helping our community thrive. In December, we became the proud owners of Indian Iron Farms in Ramona, CA, where we grow beautiful, sustainably grown, organic mushrooms.

As a registered nurse for over 45 years, I (Carol Anne) have always been drawn to natural health solutions. After experiencing firsthand the healing power of medicinal mushrooms, I knew I wanted to share them with others. Together, we’ve poured our hearts into this farm, blending our backgrounds in holistic health to cultivate something truly meaningful.

We grow Lion’s Mane, Blue, Snow, and Golden Oyster mushrooms, along with Chestnut mushrooms—all indoors under precise temperature and humidity controls for maximum freshness, potency, and flavor. We offer them fresh, dried, powdered, and are developing tinctures and extracts as well.

“Indian Iron” refers to a material once so strong arrows couldn’t pierce it. Like our mushrooms, it symbolizes natural strength and resilience. Our farm features peaceful walking paths, flower gardens, and a traditional teepee for visitors to enjoy sound baths, meditation, or just a quiet moment under the oaks.

We sell directly from our farm stand, at local farmers markets, and soon through our updated online store. Whether you’re a chef, a holistic practitioner, or simply someone looking to eat cleaner—Indian Iron Farms is here to serve you.

Carol’s Journey with Mushrooms

Carol Anne, San Diego Mushroom Farmers

My connection to medicinal mushrooms is deeply personal—and life-changing.

Several years ago, I had multiple failed root canals removed from my upper left jaw. After the procedure, an abscess formed in my left sinus cavity due to bacteria released during the surgery. Despite medication, the infection worsened and developed into a dense tumor that filled my entire sinus cavity, causing intense pressure and constant pain. I was relying on pain medication every five hours just to function.

My ENT scheduled surgery to remove the tumor, but something in me hesitated. I prayed for another path—something less invasive, something that aligned with my passion for holistic healing.

The very next day, I was introduced to the CEO and formulator of Myshroom Immune Blend, a medicinal mushroom supplement (non-psychedelic). As a master’s-level research nurse in the Navy at the time, I understood and respected the science behind the product. He showed me data on how his blend supported the immune system and delivered essential nutrients at a cellular level. I decided to give it a try.

Within 24 hours of adding the mushroom blend to my smoothie, the pressure in my head and face began to lift. In just 48 hours, the pain was completely gone. After a week, I felt so relieved that I called off the surgery—much to my doctor’s concern. He insisted on a follow-up CT scan. Four weeks later, the scan showed the tumor had nearly vanished, with only a small residual area remaining. My doctor was stunned—and I was symptom-free.

That was in April 2019. The tumor never returned. I continued using the mushroom blend at a low maintenance dose for six months and saw lasting improvements in my overall health—better energy, deeper sleep, fewer aches and pains, improved digestion, and a stronger immune system. Even after stopping the supplement, the benefits remained.

Today, at 68, I still feel those same wellness gains. Mushrooms are a regular part of my diet—fresh, dried, and blended into everything from coffee to soups. Through my own healing experience, I’ve become a firm believer in the powerful health benefits mushrooms can offer.

What My Customers Say

Great quality! The Pioppini mushrooms from Indian Iron Farms had such a beautiful color when I got them and looked so fresh as if they were picked that day. Tasted great with a nice subtle earthy flavor that complemented amazingly with my well seasoned steak. Will keep continuing to support this small local organic farm!
